EMPRESS BEEF 
3 tbsp. vegetable oil
1/2 lb. sirloin steak or round, cut into strips
1 lg. onion, thinly chopped
3 stalks celery, coarsely chopped
1 pkg. frozen snow peas, cut in half
1 (3 oz.) can mushrooms, drained
1/2 c. chopped water chestnuts

SAUCE:

1 tbsp. cornstarch
1/2 tbsp. sugar
5 tbsp. soy sauce
1/2 c. water

Heat oil in large skillet, add salt, then beef, cook stirring often over high heat to brown meat about 5 minutes. Add onions, celery, snow peas, mushrooms and water chestnuts. Continue cooking over high heat, stirring 2 to 3 minutes. Cover, lower heat and simmer 5 minutes.

Combine sauce; add to skillet, cook until thickened and bubbling, 1 minute. Serve over rice.
