CANADIAN CHEESE SOUP 
1/4 c. butter
1/2 c. finely chopped onion
1/2 c. finely chopped carrots
1/2 c. finely chopped celery
1 lb. grated Velveeta cheese
2 tbsp. chopped parsley, (optional)
1/3 c. flour
1 qt. chicken stock
4 1/2 tbsp. cornstarch
1 qt. milk
1/4 tbsp. baking soda
Salt
Pepper

Melt butter and add onion, carrots, and celery. Add flour mixed with cornstarch and cook until bubbly. Add chicken stock and milk and cheese. Cook until well blended. Add soda and stir until mixed. Season to taste with salt and pepper. Add parsley if desired.
