SWEET POTATO CASSEROLE 
1 (17 oz.) can apricots
1 (29 oz.) can sweet potatoes, drained
3 tbsp. brown sugar
1/4 tsp. salt
1/8 tsp. cinnamon
1 tbsp. cornstarch
1/3 c. raisins
3 tbsp. dry sherry wine
1/2 tsp. grated orange rind

Drain liquid to make 1 cup. Mix brown sugar, cornstarch, sherry, cinnamon, salt, and liquid together. Cook until syrupy. Pour over sweet potatoes, apricots, and raisins. Add grated orange rind. Bake until bubbly at 350 degrees for 20-25 minutes.
