RED CINNAMON PICKLES | |
Lg. cucumbers Pickling lime DAY TWO: 1 c. white vinegar 1 lg. bottle red food coloring 1 tbsp. alum Enough water to cover rings Make syrup from 3 cups vinegar, 3 cups water, 15 cups sugar, 1 large package cinnamon, red hot candies and 8 broken cinnamon sticks. DAY 1: Peel and seed very large cucumbers and slice into rings enough for 8 1/2 quarts water and 2 cups pickling lime. Let set overnight. (Do not use aluminum vessel.) DAY 2: Drain and rinse until all trace of lime is off rings. Soak 3 hours in ice water. Drain rings and simmer in the above (day two) mixture for 2 hours. Make syrup from above ingredients. Put rings in after sugar is mixed and boil for 3 minutes. Let set overnight. DAY 3: Remove rings. Heat mixture to boiling and pour over rings. Let set. DAY 4: Put rings into pint jars. Heat syrup to boiling and pour over rings in jars and seal. Note they are expensive and time consuming, but worth it. |
