SALADE CUITE (COOKED SALAD) 
6 lg. ripe tomatoes
3 green peppers
6 cloves garlic
Cooking oil to coat bottom of fry pan
Salt and pepper to taste
1/2 tsp. paprika

Scald and then peel tomatoes. Dice peppers and tomatoes. Chop garlic coarsely. Put all ingredients in cold pan. Mix thoroughly. Heat at medium high while stirring until peppers are soft. Let simmer uncovered, and stirring from bottom occasionally until all liquid has evaporated. Taste and, if necessary, season. Serve cold with Pita or French bread.
