QUICK NON-DAIRY PUDDING 
This is really more of a method than a recipe. It works well as an alternative to milk or juice in frozen banana cream. Per serving: slice then freeze 1 large/2 small bananas until firm. Pulse in food processor with a teaspoon or two of milk/milk alternative, cream, cream cheese (🤫😉) or fruit juice concentrate until smooth but still stiff - Work quickly!

1 (10-12 oz.) block MoriNu (or other silken tofu)
2 ripe bananas (or 3-6 tbsp. honey, sugar or other sweetener)
1 1/2 tsp. vanilla extract (or other of your choice)
1/3-1/2 cup unsweetened cocoa powder (or melted unsweetened or semi-sweet chocolate) OR
1/4-1/3 cup (3-6 tbsp.) orange juice concentrate

Note: You won't need to add honey or sugar if you use semi-sweet chocolate.

Place all ingredients in food processor or blender. Start with the minimum amount of sweetener at first. Blend in pulses, scraping the sides with a spatula, until uniformly smooth. Adjust sweetener, blend again. Place in bowl or individual glasses for serving.

Note: For a soft pudding consistency, serve immediately. For a stiffer more mousse-like consistency, whip well in blender/food processor before removing, cover tightly and refrigerate several hours.
