FROZEN CREAM CHEESE AND
PINEAPPLE SALAD
 
1 (#2) can crushed pineapple
3/4 c. sugar
Juice of 1 lemon
2 env. Knox gelatin
1 c. cold water
1/2 pt. whipping cream
1 1/2 c. grated cheese (cream or yellow)

Dissolve gelatin in cold water. Put pineapple and sugar in saucepan and bring to a boil. Remove from fire and stir in dissolved gelatin. When it begins to congeal, whip it until it is frothy; add grated cheese; fold in whipping cream. Put in a covered dish and chill. Serve on a lettuce leaf.
