BEEF FRIED RICE 
1 lb. beef cubes (or strips)
2 c. rice (Minute rice)
2 med. carrots, chopped
1 green pepper, chopped
1/2 c. oil
3 scrambled eggs
1 lg. onion, chopped
Pinch of garlic
Soy sauce

In a large skillet or Wok heat beef cubes in 1/2 cup oil (medium heat). When browned add the carrots, pepper, onion and garlic and simmer for 3 minutes. Then add rice and scrambled eggs and stir until rice is soft. Season with soy sauce to taste.

Amazing recipe I'm 14 and made for my whole family, warning only double the recipe if you have a large enough skillet/wok or it becomes a lot harder to get the texture right.
