ZUCCHINI COOKIES 
1 1/2 c. brown sugar, packed
1 c. butter, room temperature
2 eggs
1/2 tsp. vanilla
1/2 c. sunflower seeds
1 tsp. grated orange rind
1/2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. nutmeg
1/2 c. old fashioned rolled oats
1 1/2 c. shredded zucchini
2 c. flour
1 tsp. baking soda

Cream sugar and butter together until smooth, add eggs and vanilla and beat until light. Stir in zucchini, flour, baking soda, baking powder, salt, and nutmeg until smooth. Fold in oats, nuts, and orange peel. Chill batter, drop 1/4 cup of batter 1 1/2 inches apart on ungreased cookie sheets. Bake at 375 degrees for 12-15 minutes or until lightly browned. Makes 1 1/2 dozen.
