GRANNY'S HOMEMADE PEPPER SAUCE 
This pepper sauce is my grandmothers recipe and has been passed down from generation to generation. It's an authentic and very hot sauce which uses Scotch bonnets. Scotch bonnets are considered to be one of the hottest peppers, with a Scoville rating of anything between 10 and 35 thousand. Any pepper hotter than this would just be uncomfortable, however after eating this sauce on the side of food since I was a tot, I've developed a tolerance. Give it a go, it's delicious, fiery and aromatic!

20 Scotch bonnet peppers (a mixture of yellow and red is usually nice)
1 cup distilled white vinegar, divided (Heinz)
4 tbsp. salt, divided
1 whole bulb of garlic, peeled
1 lemon, quartered
2 tbsp. olive oil

Firstly blend your scotch bonnets with 1/2 cup vinegar until very smooth (I leave the seeds in). Add 2 tablespoons of salt to this mixture while blending.

Next peel your garlic and add that to the blender with the whole lemon (chopped into 4), skin and all. Blend that with the remaining 1/2 cup vinegar and another 2 tablespoons of salt.

Mix the pepper mixture and garlic mixture together in a large bowl until well incorporated.

Take a ladle or small frying pan and heat 2 tablespoons of oil until smoking hot. Quickly add this to the mixture and stir in (this preserves the sauce). Transfer the mixture into clean bottles.

This sauce goes very well with nearly all meals. A great little condiment!
