BAKED POTATO CASSEROLE | |
3 very lg. baking potatoes 1 c. dairy sour cream 1 c. shredded Cheddar cheese, divided 1 tsp. salt, divided 1 tsp. black pepper, divided 1/4 c. diced yellow or white onions 1/4 c. chopped green onions (about 2 lg.) 1/4 c. crumbled, crispy fried bacon (about 5 slices) Bake potatoes by method of choice. Let cool. Peel potatoes, cut into 1/2-inch cubes. You should have about 5 cups of cubed baked potatoes. Arrange half of the potato cubes on bottom of greased 2-quart baking dish. Spread half the cheese over sour cream. Season with half the salt and half the pepper. Top with diced onions. Repeat layers using remaining potatoes, sour cream, cheese, salt and pepper. Top with green onions and crumbled bacon. Bake in preheated 350 degree oven for 20 to 25 minutes or until cheese melts but top does not brown. Yield: 8 to 10 servings. |
