FRENCH ONION SOUP AU GRATIN 
1 1/2 med. onions, thinly sliced
1/4 c. butter
3 c. beef consomme
1/2 c. sherry
1/2 c. grated Swiss or mozzarella cheese
Toasted croutons
Paprika
Salt and pepper

Saute onions in butter in a heavy pan until golden. Add consomme and simmer for 7-10 minutes. Add sherry; simmer for several more minutes, then adjust for seasoning with salt and pepper.
