RED BEANS AND RICE 
Saute in large skillet until onion is tender:

1 c. chopped onion
2/3 c. chopped green pepper
2 lg. minced garlic cloves
2 tbsp. butter

Add the following and simmer 10 minutes:

2 (15 oz.) cans red beans
1 bay leaf
1/2 lb. smoked sausage, sliced

Remove bay leaf. Serve mixture over 4 cups cooked rice while still warm.
