RED BEANS AND RICE 
1 lb. dried red beans
1 lg. onion, diced
1 garlic bud, minced
1 c. chopped celery
1 tsp. parsley flakes
1 tsp. salt
2 to 3 lbs. smoked sausage

Cut sausage into bite-size pieces. Pour all ingredients into a 4 1/2 quart saucepan or Dutch oven, fill pot with water. Bring to a hard boil. Reduce heat to low. Cook 4 hours. Serve over cooked rice.
