RED BEANS AND RICE | |
1 lb. red beans 1 chopped onion 1 sliced bell pepper 2 to 3 toes garlic Olive oil 1 tsp. each oregano, basil, thyme, salt 1/2 to 3/4 tsp. cayenne pepper 1 tbsp. each Worcestershire, liquid smoke, and ground cumin 1 to 2 ribs chopped celery 1 lb. smoked sausage (turkey, pork or ham) 1 lemon, juice of 1 tbsp. sugar, optional Soak beans overnight in lots of water, rinse well and drain. Saute onion, bell pepper, and garlic in olive oil (this is the low cholesterol recipe). When veggies are tender, add beans and cover with water. Add oregano, basil, thyme, salt and cayenne pepper. Add Worcestershire, liquid smoke, ground cumin and celery. Slice and add smoked sausage or ham, cook on low heat until beans are tender, about 2 hours. After beans are cooked, add juice of lemon, and sugar if desired. It's best made a day ahead. Make sure theres plenty of water over the beans as they cook because it makes the "gravy". Serve over rice and enjoy!! |
