RHUBARB CAKE 
4 c. rhubarb
1 pkg. red Jello
1 c. sugar
4 c. sm. marshmallows
1 pkg. yellow or white cake mix

Cook slightly the rhubarb and sugar. Use very little water. Stir often to prevent scorching. Use a large cake pan (preferably a glass pan). Pour rhubarb and sugar mixture in pan. Sprinkle red Jello over this. Then spread small marshmallows. For last layer use either yellow or white package cake mix. Follow cake directions for mixing. Pour batter to cover ingredients. Some marshmallows will come to top of mixture. Bake at 350 degrees for 45 minutes. Excellent with Cool Whip or ice cream.
