CORN CASSEROLE 
3/4 stick butter
1 onion, chopped
1/2 bell pepper, chopped
salt and pepper to taste
1 can cream style corn
1/2 jar pimientos, chopped
1 c. cooked rice

Sauté vegetables in butter; add salt and pepper to taste. Add corn, pimiento, and rice; stir together and place in a baking dish. Top with grated Cheddar cheese.
