DUTCH POTATO SALAD | |
6 frankfurters, cooked and cut in 1/2 inch slices 4 c. hot diced potatoes 1 med. onion, chopped 1/2 c. celery, chopped 1 tbsp. parsley, chopped 1 1/2 tsp. salt 1 tbsp. flour 2 tbsp. fat (bacon drippings) 1/3 c. sugar 1/3 c. vinegar 1/4 tsp. pepper 2/3 c. water Fry onion in hot fat until light brown. Add flour and blend, browning flour lightly. Add sugar, salt, vinegar, and water. Bring to a boil, stirring constantly. Pour dressing over potatoes and frankfurters. Sprinkle with pepper. Serve hot. |
