GROUND BEEF AND POTATO ROLL WITH
ONION GRAVY
 
2 lbs. very lean ground beef
1 1/2 c. chopped onion
1/2 c. seasoned bread crumbs
2 eggs
2 tsp. garlic powder
1 tsp. salt
1/2 tsp. black pepper
1 1/2 c. mashed potatoes
1 c. plain yogurt
2 tbsp. chopped parsley
4 tbsp. butter
3 tbsp. flour
2 c. beef broth

Combine beef, 1/2 cup onion, bread crumbs, eggs, garlic, 1/2 teaspoon salt and 1/4 teaspoon black pepper in bowl.

Combine potatoes, 1/2 cup yogurt, parsley, remaining salt and pepper in small bowl.

Spread beef mixture on waxed paper to form rectangle. Spread on potato mixture, leaving 1/2 inch border. Using waxed paper as guide, starting from a long side, roll up. Place in 13x9 inch baking dish.

Bake in preheated 350 degree oven for 45 minutes.

Cook 1 cup onions in butter in small saucepan until tender (4 minutes). Whisk in flour, cook, stirring, 4 minutes until thickened. Gradually stir in broth; cook stirring 4 minutes until thickened and bubbly. Stir in remaining yogurt. Gently heat through. Remove loaf from dish. Serve with gravy.
