SCALLOPED POTATOES WITH SAUSAGE 
1 lb. bulk sausage, partially browned
6 tbsp. sausage fat
6 tbsp. flour
3 c. milk
4 c. sliced raw potatoes
2 tbsp. chopped onion

Stir flour into the 6 tablespoons of sausage fat. Add milk; cook until thickened. Arrange sliced potatoes, onions, sausage, and sauce in layers in a casserole. Leave some sausage for the top. Bake at 350 degrees for 1 to 1 1/2 hours (until potatoes are done).
