HAMBURG SALAMI 
5 lb. hamburger
5 rounded tsp. Morton's Tender Quick Salt
2 1/2 tsp. garlic salt
2 1/2 tsp. coarse pepper
2 1/2 tsp. mustard seed
1 tsp. Hickory Smoke Salt
1 tbsp. crushed red pepper
2 1/2 tsp. whole black peppercorns
1 tsp. minced garlic

Mix spices together; add to meat. Mix with hands; refrigerate. Next day, mix again with hands; refrigerate. Next day shape into 3 rolls. Bake on broiler pan on lowest rack in oven at 150 degrees for 8 hours. Turn every 2 hours. Drain on paper towels. Freezes well.
