HAMBURG SALAMI 
5 lbs. hamburg (high fat content preferred)
5 tsp. Morton Tender Quick salt
5 tsp. table salt
2 1/2 tsp. garlic salt
1 tsp. crushed red pepper
1 tsp. liquid smoke
2 tsp. coarse black pepper (or reg.)
2 1/2 tsp. mustard seed

Mix all ingredients; knead like bread dough and refrigerate 24 hours. Knead and refrigerate another 24 hours. Knead again and shape into desired size rolls. Bake for 8 hours at 150 degrees on broiler pan, turning after 4 hours in center of oven.
