GREEN TOMATO PICKLES 
1 gallon green tomatoes, diced
1 c. salt
2 qt. onions, diced
1 qt. bell pepper, diced
1 c. hot peppers, cut large
3 c. sugar
2 tsp. black pepper
1 qt. white vinegar

Put salt over tomatoes and let set 3 hours. Drain, do not wash. Have vinegar, sugar and black pepper boiling. Add chopped vegetables and cook until color changes, not over 15 or 20 minutes.

Lift from bottom of pot as the mixture begins to cook. Put in hot jars and seal.
