FRIED GREEN TOMATOES | |
3 firm green tomatoes 1 egg 1/3 c. milk Dash hot pepper sauce 1/2 c. fine dry bread crumbs 1/2 tsp. salt 1/4 tsp. freshly ground pepper 4 to 6 tbsp. unsalted butter Cut the tomatoes into 1/2 inch slices. Beat the egg and the milk and hot pepper sauce in a shallow bowl. Combine the bread crumbs with the salt and pepper in a pie pan. Melt 2 tablespoons of the butter in a large skillet over medium heat. Dip the tomato slices in the milk mixture, shaking off any excess, then lightly coat with the crumbs. Fry a few slices at a time until golden, about 2 minutes on each side. Transfer to a serving dish and keep warm. Fry remaining tomato slices, adding more butter to skillet as needed. |
