GREEN TOMATO RELISH | |
12 green tomatoes 8 onions 10 green bell peppers 3 tbsp. salt 8 hot peppers, chopped 1 qt. vinegar 1 tbsp. cinnamon 1 tbsp. allspice 1/4 tsp. cloves 3 tbsp. dry mustard 1 3/4 c. sugar A few bay leaves Chop tomatoes, onions, pepper, mix and cover with the salt. Let stand overnight. Drain. Add hot pepper, vinegar and spice (in cheese cloth bag) and sugar. Bring to boil slowly, boil until tender, approximately 15 minutes. Pack in jars and seal, process in water bath 15 minutes. |
