GRANDMA'S BEEF STEW 
2 to 3 lbs. beef round, cut in cubes
2 tbsp. butter
2 tbsp. bacon fat
3 to 5 tbsp. flour
1 tsp. salt
1/2 tsp. pepper
1 clove garlic, minced
6 carrots, peeled & cut in chunks
8 potatoes, peeled & cubed
1 can mushrooms
1 can onion soup
1 c. dry red wine
1 tsp. sugar
3/4 c. Madeira wine

1. Preheat oven to 350 degrees. Melt butter and bacon fat in a large, heavy skillet or Dutch oven. Brown meat. Remove meat with a slotted spoon. Add 3 tablespoons flour, seasonings and garlic to fat. Stir until flour is lightly browned.

2. Add onion soup and water to make 2 cups liquid. Add remaining flour and stir until thickened. Add wine. Combine with meat. Bake for 2 hours.

3. Add vegetables and Madeira. Cover and cook 1 more hour. Serves 6 to 8.
