NORWEGIAN PANCAKES 
3/4 c. flour
1 tbsp. sugar
3/4 tsp. salt
1/2 pt sour cream
1/2 pt. fine cottage cheese
4 eggs, lightly beaten

Beat eggs, fold in cheese and sour cream. Then fold in sifted dry ingredients. cook on greased hot skillet. Use 1/4 cup of batter for each pancake. Brown lightly on both sides. Serve with apricot jam. About 10 cakes.
