CHEESE CUPCAKES | |
2 (8 oz.) pkg. cream cheese 3/4 c. sugar 1 tsp. vanilla 1 tsp. lemon juice 2 eggs 18 vanilla wafers 18 cupcake paper cups 1 can pie filling of choice Heat oven to 375 degrees. Put 1 vanilla wafer in bottom of each cup placed in muffin tin. Blend all ingredients until smooth and fill each cup 3/4 full. Bake 15 minutes. Immediately upon removing from oven, spoon on pie filling while cupcakes are warm. Leave in muffin tins and chill. Note: Can be frozen. Great for coffee breaks. |
