POTATO PANCAKES - DIABETIC 
1/8 c. onion
1/2 tsp. salt
2 tbsp. polyunsaturated butter
2 tbsp. skim milk
Egg substitute to equal 1 egg
1 tbsp. parsley
1/4 tsp. celery seed
3/4 c. diced potatoes
1/8 tsp. pepper

Saute onion in butter; add potatoes and mash. Blend in milk, salt and pepper. Add all other ingredients, divide into serving portions. Shape into patties. Fry in hot polyunsaturated oil until brown.
