POTATO PANCAKES 
2 c. mashed potatoes
1/4 c. grated onion
Oil for frying
1/4 c. flour
Dash of pepper
3/4 tsp. salt

Combine potatoes, onion, flour, pepper and salt. Mix well. Cover bottom of iron skillet with oil. Spoon mixture into hot oil - one tablespoon to each pancake. Do not crowd. Fry 2 to 3 minutes until brown and crisp. Drain on paper towels. Makes about 18 to 20 pancakes.
