SWEET POTATO FRITTERS | |
1 lb. sweet potatoes or yams 1 egg 2 tbsp. flour Plus flour for coating 1/2 tsp. salt 1 tsp. cinnamon 1/2 tsp. nutmeg Oil for frying Quarter sweet potatoes. Put in a large of water. Bring to a boil and cook for about 15 minutes. Cool and peel. Put in a food processor with egg, 2 tablespoons flour and 1/2 teaspoon salt. Puree until smooth. Stir in cinnamon and nutmeg. Heat 1/2 inch of oil in a large frying pan. Flour your hands and shape potato mixture into patties. Coat patties with flour and fry until brown, about 3-5 minutes. Drain on paper towels. "Great with Roast Pork." |
