SAUTEED APPLES AND SWEET POTATOES | |
4 lg. apples, peeled, cored and sliced 2 sticks butter 1 c. brown sugar 1 tbsp. orange juice 2 level tbsp. cinnamon 2 lg. cans sweet potatoes or yams (not candied) In a large fry pan or Dutch oven, melt one stick of butter. Add apple slices and cook over low heat, stirring frequently. Cook until apples are tender-crisp (5-10 minutes). Add sweet potato chunks and mix well. Heat through. Remove to covered casserole and keep warm, placing a towel over casserole while you make syrup. In same fry pan, melt one stick of butter; add cinnamon. Mix well. Add brown sugar and orange juice; mix well. Return apple-sweet potatoes to pan and heat until piping hot, stirring constantly. Serve piping hot. (A simple delicious side dish, with less than 10 minutes cooking time on low heat.) |
