RICE LASAGNA 
1 1/2 c. rice, uncooked
1 lb. lean ground beef
1 med. onion, diced
1/4 c. green pepper, diced
1 egg, slightly beaten
8 oz. Mozzarella cheese
16 oz. low-fat cottage cheese (drain excess liquid)
1/4 c. Parmesan cheese
32 oz. jar of your favorite spaghetti sauce, or tomato sauce seasoned to your taste

Cook rice, set aside. Brown together beef, onion, and pepper. Mix together egg, Mozzarella, and cottage cheese. Coat baking dish with non-stick cooking spray. Make two layers - meat, rice, sauce, cheese; meat, rice, sauce, cheese.

Bake at 350 degrees for 50 minutes. Allow to stand for 10 minutes before serving.
