STUFFED BELL PEPPER 
3/4 c. brown rice
1 1/2 c. water
1 lb. lean ground beef
4 lg. or 5 med. bell peppers, cleaned
2 (8 oz.) cans tomato sauce
2 tsp. parsley
1 tsp. oregano
1 onion, chopped
2 cloves garlic, minced
Salt to taste
Pepper to taste
10-12 lg. flour tortillas
1 lb. cheese, grated

Cook the rice in the 1 1/2 cups of water. Fry the hamburger and add tomato sauce, parsley, oregano, onions, garlic, salt, and pepper. Boil the bell peppers in water for 15 minutes. Remove to cutting board to cool. Cut the peppers into large bite size pieces. Add them to the hamburger. Add rice and bake in a 350 degree oven for 1/2 hour.

While mixture cooks grease with butter a large cookie sheet. Butter the tortillas. When rice mixture is done fill the tortillas with rice and meat mixture, sprinkle with cheese, roll and place on cookie sheet. Bake 5 minutes. Sprinkle cheese over the tops and return to oven until melted. Yummy!
