APPLE CAKE 
1 3/4 c. peeled, chopped apple
1 c. sugar
1/2 c. butter, melted
1 egg, beaten
1 1/2 c. flour
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 c. raisins
1/2 c. nuts

Put apples and sugar into medium size mixing bowl, and stir together. Let stand 15 minutes. Add butter and egg to apples; stir. Sift dry ingredients together and stir into apple mixture. Mix in raisins and nuts. Pour into oiled, or Pam sprayed 8 inch square pan.

Bake 325 for about 45 minutes.

Glaze:

1/2 c. buttermilk
1/4 c. butter
1 c. sugar
1/2 tsp. baking soda
1 tsp. vanilla

Bring to a boil the buttermilk, butter, sugar and soda. Cook 2 or 3 minutes. Cool slightly and add vanilla. Pour over warm cake. Serve warm or cold.
