SPICY APPLE CAKE 
Glaze:

6 tbsp. butter
1 c. sugar
1/2 tsp. baking soda
1/2 c. buttermilk

Bring to a boil. Simmer 5 minutes. Pour over warm cake.

Cake:

1 tsp. cinnamon
1 c. finely chopped apples
1 c. coconut
1 c. chopped nuts (pecans, walnuts or almonds)

Beat together sugar and eggs until fluffy. Add oil, juice and vanilla. Beat well. Mix dry ingredients together and stir into egg mixture just until blended. Do not beat. Stir in apples, coconut and nuts. Pour into a greased 9 x 13-inch baking pan.

Bake at 325°F for 1 hour or until cake tests done in the center. Pour the following glaze over cake while cake is still warm.
