COTTAGE CHEESE MUFFINS 
1/3 c. sugar
3 tbsp. butter, softened
1/2 c. Cass Clay 2% cottage cheese
1 tsp. grated lemon peel
1 egg
1 3/4 c. biscuit mix
1/2 c. Cass Clay 2% milk

Mix sugar, butter, cottage cheese, lemon peel, egg and milk. Add biscuit mix and fold in until just moistened. Bake at 400 degrees for 20 minutes in greased muffin tins. 15 muffins. 109 calories each.
