DIABETIC'S CHOCOLATE CARAMELS 
1 c. honey
1/2 sq. of butter chocolate, shaved
1/4 c. cream
Few grains of salt
Lump of butter
Pinch of soda
Pecans

Boil until mixture forms a soft ball in cold water. Add lump of butter. Turn off fire and add a tiny pinch of soda and beat well until thick. Add nutmeats. Spread on buttered plate. Cool in refrigerator. Break into small pieces. Keeps best in refrigerator.
