MOCK CHOCOLATE RUM TRUFFLES 
3 eggs
1/4 c. water
2 tbsp. light rum
1 tbsp. frozen orange juice concentrate, thawed
26 packets Equal
1/3 c. cocoa
1 1/3 c. fine, dry bread crumbs

Beat eggs with water, rum and orange juice concentrate until thick and lemon colored, 5 to 7 minutes. Gradually add Equal. Fold in cocoa and bread crumbs. (Mixture will become very dense.) Shape rounded teaspoons of the mixture into balls. Let stand at room temperature until outsides are dry. Store in air tight container in refrigerator.

Makes 3 1/2 dozen truffles or 14 servings. 3 truffles per serving.

VARIATION: Substitute 1 teaspoon rum extract for rum. 69 calories per serving. 1 bread diabetic exchange.

NOTE: We use just 12 packs of Equal, seems sufficient. And, of course rum extract.
