GREAT GRITS 
2 c. hot water
1 tsp. butter
1 sm. onion, thinly sliced
3/4 c. cooked, diced ham
1/2 c. quick grits
3/4 c. grated cheddar cheese
Salt to taste

In a medium saucepan simmer first four ingredients until onions are soft. Add grits and salt, bring to a boil, stirring occasionally until grits reach desired thickness. Remove from heat and stir in cheese until melted, serve hot. Serves 2.
