NOODLES WITH COTTAGE CHEESE 
1 lb. egg noodles
1/2 lb. cottage cheese, middle curd
1/2 c. sour cream
1/2 lb. double-smoked slab bacon
Salt

Put the noodles in boiling, lightly salted water and cook it for 6-8 minutes. (They should be what Italian call al dente.) Meanwhile cut the bacon in 1/2 inch dice and fry until almost crisp. Then drain the noodles and put them into a casserole. Pour the melted fat of the bacon on them and mix. Sprinkle with cottage cheese, sour cream and cracklings. Bake in the preheated oven (350 degrees) for 5 minutes. The dish must be served hot. Salt it as you like.
