JELLY ROLL 
1 c. sugar
1 1/2 c. cake flour
1 1/2 tsp. baking powder
1/4 tsp. salt
1/2 tsp. cream of tartar
1 tsp. lemon flavoring
1 tsp. vanilla
11 egg yolks

Add to slightly beaten egg yolks 1/2 cup boiling water. Beat 8 to 10 minutes. Fold sugar into egg mixture. Sift dry ingredients and fold into mixture. Add flavoring. Pour into 14 x 18-inch pan or large baking sheet lined with waxed paper. Bake at 375 degrees for 15 to 20 minutes. Turn out on towel that has been sprinkled with powdered sugar, remove or peel off waxed paper and roll up. When cool, unroll, spread with jelly or favorite filling and roll again.
