EASY FAJITA'S | |
1 lb. fajita meat (beef or chicken) 1 tbsp. cooking oil 1 pkg. fajita seasoning mix = marinade Juice of 1 to 2 limes Flour tortillas, warmed 1/2 c. sliced onion 1/2 c. sliced green pepper Chopped tomatoes 1 c. shredded cheese Sour cream Slice fajita meat cross grain into 1/4 inch strips (sprinkle meat with lime juice). Prepare marinade - prepare seasoning mix by package directions and use as marinade. Place sliced fajita meat and prepared marinade in bag and refrigerate for 6 hours. Drain marinade and discard. In large, nonstick frying pan, heat oil. Add meat. Cook for 2 minutes. Add onion and pepper. Cook for 3 minutes, turning frequently. Remove from heat and place in warm tortilla. Sprinkle with cheese and tomato. Add sour cream and picante sauce. |
