CROCK-POT FAJITAS
Super easy Crock-Pot meal. I usually cook on LOW for 7 to 8 hours. Here are the basics. You can alter to your liking.

1 lb. chicken breast, cut into strips (beef or tofu can also be used)
1 onion, chopped
2-3 cloves fresh garlic, chopped
1 (4 oz.) can diced green chiles (or jalapenos)
1 red pepper, cut into strips
1 yellow pepper, cut into strips
2 (15 oz. ea.) cans beans (black, kidney, pinto)
1/2 tsp. cumin
1 env. fajita seasoning

Add all ingredients to Crock-Pot and mix well. Choose your temperature and cook as stated below.

Using slotted spoon, fill and serve meal wrapped in flour tortillas. Top with cheese if desired.

HIGH: 4 to 5 hours; LOW: 7 to 8 hours.

This recipe is one of my favorites! It's so easy and tasty, the chicken has a great flavor with the beans and veggies. The spices are just perfect. I love to add sour cream for extra flavor.
