IRVING RUBIN'S GRILLED POTATOES | |
12 oz. red new potatoes, scrubbed and thinly sliced 1 tbsp. and 1 tsp. soft (not stick) reduced calorie butter 1 tbsp. grated onion 1 garlic clove, minced Salt and pepper to taste Preheat barbecue grill. Tear off 8 inch wide strip of foil. Place 3 ounces potatoes in center of each foil strip in 2 overlapping rows. Dot each with a teaspoon of butter; sprinkle evenly with grated onion and garlic. Season with salt and pepper. Crimp foil over potatoes to make a packet. Cook on grill until potatoes are done, about 20 to 30 minutes. (Can be cooked in oven at 350 degrees.) |
