NORWEGIAN APPLE CAKE 
1 1/2 c. flour
2 tbsp. baking powder
2 eggs, beaten
1 c. grated lg. apples
1 c. butter
1 1/2 c. sugar
1 tsp. vanilla extract

Mix baking powder and flour; set aside. Cream butter and eggs. Add sugar. Mix with flour and baking powder. Slightly grease with butter a cookie sheet. Take 1/2 of the dough mixture; pat with your hands on a cookie sheet. Sprinkle grated apples on this, then add the remaining part of dough on top of apples. This will form a crunchy top.

Use 1 tablespoon cinnamon; sprinkle on cake. Bake at 350 degrees for 45 minutes. You can frost with powdered sugar while warm. The dough that I put on second layer, I drop by hand or sprinkle it on. This makes the crunchy effect. Let cake cool; cut into squares. You can freeze this, if you desire, for later serving.
