NORWEGIAN CHRISTMAS CAKE 
1 1/2 c. sugar
1/2 c. shortening
3 eggs
1 good c. mashed potatoes
1 1/2 c. raisins (whole or chopped)
Nuts, chopped
2 to 2 1/2 c. flour
1/2 c. cocoa
1 tsp. cinnamon
1 tsp. salt
1 c. milk

If using sour milk, add 1 1/2 teaspoons soda.

If using sweet milk, add 1/2 teaspoon baking soda and 1/2 teaspoon baking powder.

Mix as a one bowl cake. Bake in 9 x 13 inch greased pan in a 350 degree oven for 30 to 35 minutes. Frost with a thin powdered sugar glaze when cool.
