BAKED GARLIC POTATOES 
1 lb. sm. unpeeled white potatoes
4 cloves fresh garlic, minced
4 tbsp. olive oil
1/4 c. parsley, chopped
2 tsp. salt
1/4 tsp. fresh ground pepper
Butter

Wash and dry potatoes. Place in casserole dish. Combine garlic, oil, parsley, salt and pepper. Pour mixture over potatoes and toss to coat. Cover and bake at 450 degrees for 20 minutes. Turn potatoes to recoat in oil. Then bake 25 minutes more. Cut potatoes open and squeeze ends to fluff them up. Serve with butter.
