HARVEST SWEET POTATOES 
2 lbs. sweet potatoes
1/4 c. plus 2 tbsp. Promise butter
1/2 c. frozen pineapple juice (concentrate), undiluted
1 tbsp. brown sugar
1/4 tbsp. salt
1/8 tsp. ground cloves

Cook sweet potatoes in unsalted water until tender (about 25 minutes). Peel. In large mixing bowl, combine potatoes, 1/4 cup of the butter, pineapple juice, sugar, salt, and cloves. Beat until smooth. Serve with remaining butter. Serves 8.
