CHEESE AND VEGETABLE CASSEROLE 
1- 16 oz. bag frozen broccoli, carrots and cauliflower
1 can cream of mushroom soup
1/3 c. sour cream
1 c. shredded swiss cheese (or cheese of choice)
1/4 tsp. black pepper
1 small can French fried onions

Thaw and cook vegetables about 5 minutes. Drain. Combine vegetables, soup, sour cream, pepper, 1/2 cup cheese and half a can of onions. Pour into baking dish and bake covered at 350°F for 30 minutes. Remove cover, add remaining cheese and onions and bake uncovered for 5 - 10 minutes.
